SR_001 Curuba Co-Ferment — Finca La Sirena

This Select Reserve release features a meticulously crafted microlot from Quindío, where producer Juan Puerta is redefining what innovation in coffee can look like. While co-fermented coffees often lean aggressively fruit-forward, this lot takes a more restrained, elegant approach—delivering complexity without overwhelming the cup.

☕ In the Cup

Expect a lush, tropical profile layered with notes of mango, passionfruit, and melon, rounded out by a silky, lassi-like mouthfeel. The fruit expression is present but controlled—making this an approachable entry into experimental processing without sacrificing drinkability.

🧪 The Process

This coffee undergoes a honey-style co-fermentation with curuba, a lesser-known fruit native to Colombia and part of the same botanical family as passionfruit.

Curuba brings a mild, tangy-sweet character that enhances the coffee’s natural profile rather than masking it—resulting in a cup that feels integrated, not artificial.

After honing his craft alongside José Giraldo at Café 1959, Juan Puerta set out to build something of his own through Sens Coffee. His work at Finca La Sirena represents a forward-thinking approach to coffee production—using innovative fermentation techniques to adapt to climate challenges while preserving the viability of traditional growing regions.

At elevations where many farms are abandoning coffee altogether, Juan’s methods are helping breathe new life into Colombian coffee—balancing science, sustainability, and exceptional cup quality.

This Select Reserve release highlights a standout lot from Acatenango, where the Pérez family at Finca La Senda are pushing the boundaries of modern coffee processing. The result is a cup that feels both juicy and structured, delivering layered complexity without losing balance.

Bright and expressive with notes of peach, plum, and tart berry, supported by a syrupy body and layered sweetness. The finish softens into a delicate floral aftertaste, giving this coffee both vibrancy and elegance.

🧪 The Process

This lot is processed using carbonic maceration, a controlled fermentation method adapted from winemaking. Whole cherries are sealed in oxygen-limited environments, allowing internal fermentation to enhance fruit clarity and texture.

At La Senda, this is paired with:

  • Selective cherry picking for optimal ripeness
  • Sealed-barrel fermentation (including anaerobic variations)
  • Targeted yeast inoculation to refine structure and flavor
  • Slow, shaded drying on raised beds for stability and consistency

The result is a coffee that feels intentional at every step—clean, vibrant, and highly expressive.
