This month's coffee club features something unique and something classic.

This coffee was so fun for us to cup and since the day it comes off the roast you can experience an evolution in profiles day to day as it settles. From taste recalls of swedish fish, think candied sweet, refined sugar, cherry, dark skin red fruits, and licorice. All the way to whisky glazed bread pudding, think toasted bread, boozy, mouth-coating caramelized flavor, and dried fruit (raisins).

Torch Coffee Company, located in Yunnan, China, is a specialty coffee roaster that focuses on producing high-quality, ethically sourced coffee beans. The company is known for its commitment to sustainable farming practices, working directly with local farmers to improve their livelihoods while promoting environmentally friendly techniques. Torch Coffee emphasizes the unique flavors of Yunnan’s coffee-growing regions, which are increasingly gaining recognition for their rich, complex profiles. By combining modern roasting methods with traditional Chinese coffee culture, Torch Coffee aims to elevate the coffee industry in China and globally. They prioritize transparency and traceability in their sourcing, ensuring that every step of the coffee’s journey—from the farm to the cup—is conducted with care and respect for both people and the planet.

We had an opportunity from one of our trade partners to secure this selection from a lot to fill our annual Lunar New Year release and it did not disappoint. Allocations were extremely limited so we wanted to ensure members had their share of the experience!

The fruit and floral floral on the display was just a nice pairing/contrast to the experience with the China selection. From the start with the dry grounds you will embellish in the aroma of sweet notes, fruits, spice, and even a bit of brown bread. The wet aroma is even sweeter like honey and more distinct notes of dried stone fruits. Allowing this selection to develop a bit after first crack brought forward those notes of cocoa and just adding to a nice cup quality for espresso.

Limu Kossa is a renowned coffee-growing region in the Jimma Zone of Ethiopia, celebrated for producing high-quality Arabica beans. Located in the southwestern part of the country, Limu Kossa benefits from the ideal climate conditions of rich, fertile soils, high altitudes, and a mix of sun and rain, contributing to the unique flavor profiles of the coffee. The region is known for its washed (wet) processing method, which enhances the bright, fruity, and floral notes of the beans, often with a smooth, balanced cup. Finding a natural from Dabessa with the profile and clean finish was a must have!

Limu Kossa coffee is grown by smallholder farmers who cultivate the beans in a traditional, sustainable manner, with a focus on quality and environmental stewardship. The region’s coffees are characterized by mild acidity, complex flavors, and a medium body, making them highly sought after in the specialty coffee market. Limu Kossa’s reputation has continued to grow, with the region playing a significant role in Ethiopia’s coffee export industry.
